9.21.10 End-of-Summer Corn Chowder
With less than 4 hours of summer left, I am thinking "End-Of-Summer Corn Chowder" might be a bit of a stretch. Apparently I am holding on tight until the bitter end. Really, I'm not really a soup in the summer kind of gal. I'll fall for a watermelon gazpacho, a chilled cucumber soup or even the occasional light tomato number. But a chunky corn chowder, thickened with hearty potatoes and cheddar cheese—this screams fleece sweats and cozy socks. So ignore the calendars, find yourself a few ears of fresh corn and cut the chill in the air with a warm bowl. In your comfy socks, of course.
End-of-Summer Corn Chowder
serves 4
2 T olive oil
2 garlic cloves, minced
1 large onion, chopped
1/2 t cayenne pepper
2 c diced red potatoes
5 c vegetable broth
1/2 c sour cream
1/2 t salt
kernels from 5 ears fresh corn
1 c grated cheddar cheese
pepper, to taste
2 scallions, chopped
In a large sauce, pan heat olive oil over medium heat. Add garlic and onions, and cook 10 minutes, until beginning to brown. Stir in cayenne and potatoes, and cook 3 minutes, stirring often. Add vegetable broth, sour cream and salt, stirring well. Cook 20 minutes. With a potato masher, lightly mash about half the potatoes, to create a thicker broth. Cook an additional 10 minutes, until potatoes are tender. Stir in corn and cheddar, and cook 5 minutes. Season to taste with salt and pepper. Garnish with scallions and additional sour cream, if desired.

I love seeing a chowder recipe with no bacon in it! The sour cream and cheddar must add nice richness, and corn and potatoes sounds so great right now.

I never thought about this, but you are right! Corn is so summery but anything chowder screams fall or winter. I do love corn chowder and there are still a few ears at our markets. Yum!

At first I thought it looked like small chunks of bacon had jumped in your soup, then I realized it was just red onion. Pheew...
We have really been big consumers of corn these last couple of weeks. We have cooked it, grilled it, had it in salads, made baby food with it. But not yet tried it in a chowder, so now it's on our to-do-list!
I love corn. I love chowder. I love the end of summer. So I'm pretty much guaranteed to love this recipe. Although the prediction of 94Ëštoday isn't the end of summer I'm looking for. Guess I'll dog ear this recipe for later and go for that chilled cucumber soup:)

Oh yummy!!! I am honestly glad summer is over here in Texas -- it has been so HOT. We had our first day of fall here yesterday and it couldn't have come at a better time. Maybe if I search hard enough I'll still be able to find the last of the Summer corn, because nothing beats having a bowl of hearty soup (like this one) on a cool fall day. beautiful Erin, as always :)

I doubled the recipe, and used a bag of frozen corn in addition to the lowly 4 last ears available at the market. Still tastes delicious.
I love the idea of cheddar, here. The sharper, the better, plus corn? Yum!

Okay this might be the most amazing and comforting bowl of soup I've seen! And I'm not really a soup person.
Not a big chowder fan, but carnivorous DH is so I tried it. Didn't have cayenne so I used tabasco & smoked paprika. It was hearty & filling and delicious. I will be making this again.
Very tasty soup! I substituted ~1/3 of the potatoes with diced parsnips and it was a great addition! Topped with diced fresh jalapeno and I could eat this several times a week!

This looks and sounds delish! However, I have a question. Does anyone know how much corn (in ounces or cups please) would be the equivalent of kernels off of 5 ears of corn? I'd like to try making this with the corn I have on hand in the freezer, which isn't on the cob. Thanks, and I can't wait to try it!
Lori, Hmmm...I am not quite sure. I think about 2 c would be good. It should be pretty dense with corn. Although you can certainly add less if you prefer, to your liking. Enjoy!
Just made this for my boyfriend... We loved it. For a third of the broth I subtituted a puree of carrots, onions, and garlic that I cooked in chicken broth and then reduced. It gives a very fall-like color and accents the spicey note from the cayenne very nicely!

This was good but it takes way longer than the recipe says to get the potatoes mushy enough to mash, unless the laws of physics are different in my kitchen for some reason. Otherwise this was tasty.
