15-Minute Curried Zucchini

As I sit here and write this, it’s pushing seven p.m. and the temperature outside is lingering in the 90s. My house is considerably cooler, but not cool enough to stay in the kitchen any longer than necessary, when the AC in my bedroom is serenading me with its gentle hum. I considered calling for takeout, and answering the door in my bathing suit, with a cold towel draped over my neck, but I have an enormous just-picked zucchini taunting me from the fridge.

So, I pour myself an icy cold glass of sangria, start the oil on the back burner—furthest from my face, and begin chopping with the fierceness of the devil. In the vegetables go, followed quickly by the spices, and the wonderful smell of cumin and curry permeates the humid air. Minutes later, I am sitting in the AC, enjoying the crunch of tender, spicy zucchini and thinking the dirty dishes can wait...until sunset.

15-Minute Curried Zucchini
makes 4 wrap sandwiches

3 T olive oil
1 large onion, chopped
3 large garlic cloves, minced
2 t cumin seeds
2 medium zucchini, cut into 1/2" pieces
1 t salt
2 t cumin
1 t curry
1/2 t turmeric
1/2 t ground ginger
1/8 t cinnamon
large handful cilantro, chopped
2-3 red chili peppers, seeded and chopped
4 whole-wheat tortillas

In a large sauté pan, heat oil over medium-high heat. Add onions, garlic and cumin seeds. Cook 3-5 minutes, until onions are translucent and begin to brown. Stir in zucchini, salt, cumin, curry, turmeric, ginger and cinnamon. Cook 5-6 minutes, stirring occasionally, until zucchini is tender and begins to brown. Remove from heat, and stir in cilantro and red chili peppers. Season to taste and serve in whole-wheat tortillas.

Ciao Erin! This dish looks very good! I also cooked today, unfortunately there is no air conditioning in my kitchen and in Italy it is really hot as well, but I had to cook to keep my blog updated, life is so hard for us foodbloggers during these summer months! :-D

I have been looking for recipes to use up a lot of zucchini, because our garden has hit zucchini season BIG time. I made this recipe tonight. It was excellent! THANKS!

I served over rice, since I didn't have any tortillas on hand and didn't feel like making any. Also, it's a little cumin-y for my taste. I decreased the ground cumin to 1 1/2 t and actually when I make it again (I WILL make it again) I'll probably do just a teaspoon. But other than that, really good recipe and super easy!

Goodness, this looks like heaven. I'm going to try this but with a variety of summer squashes. Do you think this would be just as delish served cold?

Katharine, glad you enjoyed! I am a cumin junkie, so it is great you made it to your taste! I love the idea of serving over rice too.

Kelsey, I had leftovers (cold) for lunch the next day & couldn't have been happier! I was thinking of throwing in some summer squash or patty pan next time too since I am starting to get a bunch of them as well. Hope you enjoy!

I made this recipe last week. It was really great. I didn't have cumin seeds so i just used more cumin powder. I've made several of your recipes now but never left a comment. Thanks for all the great food and photographs.

I just made this recipe and it's so tasty :) Initially I wanted to make this because I had zucchini and wanted to do something different but then I read the part about no AC, which is exactly my situation!
