5.24.10 Wild Rice Patties
When I think of wild rice and mushrooms, I undoubtedly think of the fall. In fact, my inspiration came from a recipe for Autumn Wild Rice Rissoles. Cranberries, nuts, sage—you know the drill. I liked the idea of using rice as a patty base. Almost as much as I liked the idea of turning one more thing into a patty.
And as luck should have it, spring brings quite a tasty mushroom, the morel. The food world goes gaga over these things. Is it the $20/lb+ price tag which screams “I’m so expensive I must be good”? For me, it is more about the thrill if the hunt and the intense interest of coming across something which has such a short growing span. Last May brought both morels and fiddlehead ferns into my sight. If you can find them, expanding your tastes is always fun. If not, substitute your favorite mushroom variety. This is a simple recipe, which can be taken in so many directions. However I’ll definitely be making again as is, because often times, simple is best.
Wild Rice Patties
makes 8 small patties
1 egg
2 c cooked wild rice, brought to room temperature (leftover rice works great)
1/4 c chopped mushrooms (about .25 lbs)
3 T finely chopped chives
2 T chopped mint
1 1/2 t salt
1/2 t pepper
3 T olive oil
In a large bowl, whisk egg. Add rice, mushrooms, chives, mint, salt and pepper. Stir well, and form into 8 patties. In a large sauté pan, heat olive oil over medium heat. Transfer patties to the pan, press down with a spatula, and cook 5-7 minutes, until golden brown. Flip patties over, press down with a spatula, and cook 5-7 minutes, until golden brown. Serve warm.

I made some quinoa burgers that are similar (with slightly different ingredients) last week. SO good! I'm sure that these are delish as well. We'll give yours a try soon!
These sound amazing! Um, and may I say, gorgeous. But have to wait until I'm done with this darn cleanse...unless you have an idea for what could bind them together besides egg? Regardless, these will enter my life in the near future. Thanks!

These look great! Any suggestions for what to serve them with? I'm thinking a simple salad, or maybe warm greens, like chard or kale?
The French, you could try a ground flax seed/water combo (1:3) or a bit of cornstarch. My rice was pretty sticky (I used leftovers) so I may have been able to do without the egg, if I flipped them gently...
SFDC, I served it with a simple spinach salad. I think it would also taste great with Tzatziki on top too!
"The thrill of the hunt", this is exactly how I felt when I foraged for asparagus last week.
This recipe sounds so interesting, the addition of mint makes me curious, I will be trying this one.

Erin, you're awesome. These patties look delicious -- I am all for the mushrooms. I've been eating mostly vegetarian now for the past year and it feels great -- I haven't cut out meat completely (I am slowly working on it) but I will get there! Thank you for the inspiration :)

Wild rice and morels are two of my favorite things. Unfortunately, I rarely get the opportunity to enjoy morels these days. I don't think they even grow in central Texas. I'll have to substitute a different mushroom, but I can't wait to try these.

There's something about patties like this that's so irresistible! Mine always seem to fall apart though. I don't think I've ever tried morel mushrooms.

Where I come from wild rice is black.
Looks like you also have white rice in here.
