Strawberry & Gruyere Tart

When it comes to cheese, I tend to bore even myself with buying the same 5 or 6 cheeses over and over. It is not that I am afraid of something a bit different. (Perhaps you have already gathered that by visiting here this past year.) It is just that when planning a recipe, my mind tends to wander to my favorites. Crave, even. So this weekend when I picked up the gruyere for a simple asparagus & puff pastry tart, I had to stop and take a bite or two before assembling. Strictly research, I assure you.

It is now filed away in my head, in a place where I can taste it on whim. Although I had need not rely on my senses for my second taste after all. After declaring the asparagus tart from Saturday a winner (which is this with asparagus, olive oil and salt/pepper vs strawberries, mint and honey), the ease of the dish was taunting me in the form of a second puff pastry. Also throwing irritated stares my way were a large container of strawberries who were beginning to turn too quick. After that it all just came together.

Given my affinity for cheese and fruit combinations, I am not that surprised. More bothered with why didn’t I think of this sooner.

Strawberry & Gruyere Tart
serves 4-6

1 sheet frozen puff pastry
2 c shredded Gruyere cheese
2 c sliced strawberries
1 T chopped mint leaves
honey, to taste

Preheat oven to 400F. On a floured surface, roll the puff pastry into a 16”x10” rectangle, folding over uneven edges. Place on a baking sheet. Lightly score dough 1”in from the edges, making a rectangle. With a fork, pierce dough all over, inside the rectangle. Transfer to oven and bake 10 minutes, until golden brown.

Remove pastry, leaving oven on, and sprinkle with Gruyere. Top with sliced strawberries and mint. Drizzle with honey, to taste. Transfer to oven, and bake 10 minutes, until strawberries just begin to soften.

Gruyere is not the first cheese I would think of pairing with strawberries, but why not! I love it's slightly nutty flavor. Sounds like a great match.

I like gruyere, but love manchego! Have you had that?

As strawberries are appearing in the farmer's markets, this will definitely make the list of things to try with them.

great combination! I recently discovered that strawberries are cheese and a fabulous combination too, but dipping them into ricotta is not a sufficient desert for company. Your tart however, looks so pretty!
